Matcha in the morning!

This magical bright green powder is great for concentration and mental clarity.


Matcha really gives these balls an extra zip!


Recipe: makes about 12 balls


INGREDIENTS-

1 cup raw cashews

10 pitted dates

1/2 cup + 1 Tsp coconut flour (or regular flour)

2 Tbsp natural cocoa powder

2 Tbsp agave nectar

1 Tbsp matcha

2 Tbsp water

*optional- add 1/2 shredded coconut


INSTRUCTIONS:

1) Put the cashews in a food processor and process until crumbly. Add the dates, flour, and cocoa powder and process another 30 seconds. Add the agave and water and process until it all becomes sticky. Transfer to a bowl.

2) In a small bowl add the matcha and 1 Tsp of flour.

3) Using a spoon and your hands, form balls that are about the size of a ping pong ball. Roll balls in matcha to lightly coat. Store in an airtight container. I personally like to use my pyrex to store these in.

4) Place balls in refrigerator to set for 30 minutes. Keep in fridge and enjoy for about a week. 👏😊🏃‍♀️
